命名

"普羅旺斯"是法國南部的一個省名, 因為"山居歲月"一部書而聲名大噪, 公司的負責人因為常去此地遊玩, 特別喜歡它的浪漫. 熱情. 多色彩的民俗風情而命名.

裝璜                                        
----
薰衣草. 向日葵. 紫色及黃色都非常普羅旺斯, 也是本店的主要顏色和標記. 本店外牆店門入口的薰衣草, 是老闆親筆所繪. 窗口的藤蔓, 是店長的手筆. 至於廚房牆上的向日葵, 則是以色列友人Lila的禮物. 店內的十四幅畫, 是老闆娘妹妹退休後所繪製的. 全都是有關普羅旺斯的風景及靜物.
畫. 不同花色的桌布. 每天變化的鮮花. 特殊而不光滑的牆壁地磚. 黑色淳樸的天花板. 以及造型特殊的燈, 就把普羅旺斯咖啡的特色展示的一覽無遺.

員工

公司現有員工十二名, 自去年2004年十月底開幕至今已超過半年. 由於店長擁有瑞士著名的大學Les Roches旅館管理學校的畢業證書, 所有員工都是經過他嚴格訓練的. 務必達到整潔. 迅速. 親切富彈性. 店長英語流利, 可以為中外來賓做周詳的服務--包括旅遊. 疑難解答等.

三名大廚, 都有多年的西餐經驗, 產品當然是精緻. 好看並且美味有特色.

吧台長
是老闆的侄女, 具有二十多年的吧台經驗. 曾在台灣五星級飯店--中泰賓館, 吧台任職. 同時也在大陸寧波設立--台北創意咖啡廳. 她為本店訓練吧台員, 也在店裡教外國太太結中國結.

老闆和老闆娘
老闆是台灣中央大學退休的教授, 瀟灑. 親切. 博學多聞. 喜歡喝咖啡而且對咖啡很有研究, 曾經在店內開過咖啡講座. 高爾夫球是目前的最愛, 也免費收了幾名學生.
老闆娘從美商德州儀器公司退休, 喜愛旅遊,走遍世界. 有閒暇時會身兼領隊帶團前往各處遊玩, 例如: 印度. 土耳其. 法國. 西班牙. 另外唱歌是老闆娘的另一愛好之, 每星期五.六晚上都在店裡獻唱,由一位音樂系畢業的山東男孩用電子琴伴奏.

自由設計

普羅旺斯除了正常的餐飲之外, 還可應客人要求設計各種類型的宴會, 派對. 本店有電子琴, 擴音器, 調音盤及小型舞台等設備, 適合表演. 平時也應顧客要求供應食譜上未列的食物.

未來展望
--------
在五年之內, 於中國各地開十家分店. 每一家都有總店的風格及水準.

             PROVENCE COFFEE BRIEF  INTRODUCTION

Name
-----
   Provence is the province name of South France.  It is famous because of the American book, " A Year in Provence". The owner of this coffee shop has been in Provence many times.  He likes its romantic, passionate, and colorful living styles, and so named the shop.
  
Decorations
------------
   Lavenders, sunflowers, purple and yellow colors are very Provence, therefore, become the main colors and marks of the shop.  On the  left wall of shop entrance, you can see the lavenders painted by the owner, the rattan around the frames of windows were painted by the manager, as for the sunflower on the outside wall of kitchen was drawn by an Israeli friend- Lila.  All the 14 oil paintings in the shop were made by the owner's sister, after she retired from Texas Instruments.  All the subjects are about Provence scenery or the static sketches.
   Paintings, different design table cloth, fresh flowers, unique non-smoothness wall and floor, black primitive
ceilings, and old fashioned table lights consist the atomosphere of Provence Coffee.

Employees

   There are 12 employess in the shop now.  It has been over half-year, ever since the shop was established last Oct. end.  Because the manager owns the diploma of Hotel Management, Le Roches Unversity of Switzerland, all the employees have been trained by her strictly.  They must achieve clean, fast, and friendly services.  The manager, speaking fluent English, can serve Chinese and Foreign guests in details-- includilng tourism information, daily difficulties,....  She is the daughter of the owner.

   There are 3 chefs, with many year experience in western food.  Their products, of course, are looking and smelling good and delicious.
   The chief bartender has coffee experience for over 20 years.  She has been working in the 5-star hotel in Taipei, and also set up a coffee shop in Ning Bo.  She is also teaching foreign wives Chinese knots in Provence.
   The owner is a retired prefessor, handsome; friendly; and knowledgable, especially in coffee.  He has made a seminar on coffee types/drinking manners/influence on human body.  His current favorite is Golf.
   The owner's wife is also retired from Texas Instrument.  She has already travelled all over the world.
When there is a free time, she usually leads the group to India, Turkey, France, and Spain....  Her favoriteb is singing.  Every Friday and Saturday, she sings 60's and 70's old songs in Provence, with electronic piano by the Sheng Dong pianisst.

Customer's Design

   Except the normal meals, coffee, tea, and beer, Provence designs the different kinds of party per requirements. The shop owns 180 square meters space which can attend 50-60 persons, and is equipped with electronic piano,amplifier, and a small stage. 

Development & Goal

   Within 5 years, there will be 10 branch-shops all over China.  Every shop owns the styles and standards of
Mother - shop.
